Six Ingredient Cookies

Hi everyone!

 Man, I'm really bad at this updating your blog thing, Haha. I'm going to make it my goal this year to update more often, and actually put up some crafts! I have been getting back into crocheting again, and I have lots of completed projects that I want to share with you guys! ^_^ But that is for another day..today I have a new recipe to share with ya'll! (I watch Paula Deen's cooking show too much -_-)

 Six ingredient cookies! Okay, so the original recipe is actually only 2 ingredients, but I added a few extras to make them yummier! I stumbled upon this recipe a few days ago on Blogilates, which led me to google "2 Ingredient cookies" and I found a similar recipe on The Burlap Bag. I already had some ripe bananas on hand, which I had to hide since bananas disappear quick around here, so I figured I would try it out! 

Okays guys..these cookies are amazing! Now just to warn you, they don't taste like your average sugar-filled, buttery cookie. Actually, I think they are even better than regular cookies. The key though is using extra ripe bananas so they are super sweet. :) No need to add any kind of sweetener! If you use raisins/and or nuts instead of dried cranberries, along with gluten-free oats, these are Gluten, Sugar, and Dairy Free!

Six Ingredient Cookies
Adapted from The Burlap Bag
Printable Recipe

Ingredients

  • 2 ripe bananas
  • 1 cup of quick oats*
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup dried cranberries**
Directions
  1. Preheat oven to 350 degrees.
  2. In a large bowl, mashed bananas first, then mix in the rest of the ingredients and shape into cookies on a greased baking sheet.
  3. Bake for 15 minutes, then let cool on sheet for 1 minute before transferring to a cooling rack.
  4. Eat within 2-3 days, or store in the refrigerator to keep longer.
Makes 10 servings.
~60 calories per cookie


*If you only have regular rolled oats, pulse in a food processor/blender a few times to make your own quick oats, or chop with a knife.
**Replace with any add-in you want! Raisins, Nuts, Chocolate chips, the possibilities are endless!

Recent Eats

Hi there!

I've really been wanting to post more frequently lately, but I keep forgetting to take pictures of my eats. I'm alway halfway done with my meal by the time I remember. Haha

Exercise Program Update: So back in September, I came down with a cold on my last week of TurboFire. GRRR! Why does that always happen?! :( I was a bit lazy with working out for a week or 2 and I recently started up a new program again. This time I am doing a TurboFire/ Chalean Extreme Hybrid! I'm already on week two. It's been pretty easy so far, but that's because this is recovery week. By week four, it starts to get a bit more intense and incorporating more TurboFire workouts. Wish me luck on not getting sick this time!

If you love banana bread, I guarantee that you will love this recipe. I think it's actually even better than full fat, sugar overload banana bread. These are the perfect portion size for breakfast or for an afternoon treat with coffee. Try this recipe out and see for yourself!










"Banana Bread" Baked Oatmeal
Adapted from Sweeteners and Light 
Printable Recipe

Ingredients
  • 2 eggs*
  • 1 cup unsweetened applesauce
  • 1/2 cup unsweetened vanilla almond milk (you can use any milk)
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • 6 very ripe bananas, mashed
  • 1 tsp ground cinnamon
  • 1/2 cup stevia baking blend or 12 stevia packets
  • 3 cups rolled oats
  • 6 tbsp any flour (I used rolled oats ground into flour)
  • 4 tsp baking powder

  • Instructions

    1. Preheat oven to 350*F degrees. Combine the first 8 ingredients in a large mixing bowl. Mix well.
    2. Sprinkle dry ingredients on top of the wet ingredients and stir until just combined. Grease a 9x13 glass baking dish with non-stick spray. Pour batter into pan and shake it a bit to even out the top surface.
    3. Bake for 35 minutes or until done. Cut into 12 pieces and store in the refrigerator.

    ~Makes 12 servings @ 155 calories , 0.8 grams of fat. (if using whole eggs)

    *You can use egg whites instead of whole eggs or 2 flax eggs (2 tbsp flax meal + 6 tbsp warm water) to make it vegan. Adjust calorie count accordingly. :)

    UPDATE: I made a batch of baked oatmeal today without adding stevia and using only REALLY ripe bananas. It tastes just as sweet to me! Just make sure you use really ripe bananas..like almost black. :)

    The Avengers and Cheesecake!

    I had a great time last night with Randy(a.k.a the husband). We went to the Cheesecake Factory for an early dinner. I couldn't believe how busy it was for it being 4 o' clock on a Thursday! But then we realized it was because of happy hour. I ordered the Mexican Tortilla Salad from their Skinnylicious menu, and let me say, it was sooo good! I will be getting that again the next we go. I was so hungry by the time it came, that I forgot to take a picture! Randy ordered a turkey burger and he let me sneak in a small bite before he devoured it all. :) I was pretty sure we were supposed to get bread with our meal, since the last time I went to the Cheesecake Factory they did, but that was fine by me. No bread in your face, means no extra calories!

    After we filled our tummies with some healthy food, we left to go see the Avengers! Again, it was packed also for a Thursday afternoon! We got there just in time to find a good seat before it filled up. Some people had to sit alllll the way in the front, but I'm glad we didn't have to! I thought the movie was good. I love action movies, and there was plenty of that in this movie.

    Since we didn't get cheesecake at the restaurant, I made myself a yummy fruit and yogurt parfait for dessert when we got home. Yum! Ten times better than McDonald's!


     
    Fruit n' Yogurt Parfait 

    Ingredients:
    • 1/4 cup fresh or frozen strawberries
    • 1/4 cup fresh or frozen blueberries
    • 1- 6 oz container of vanilla yogurt
    • 1 tbsp granola  (I made my own using Julie's Cinnamon Chia See Granola recipe)
    Directions:

    1. Place berries in a bowl and nuke it for 60 seconds or until they're soft. Crush them up a bit with a spoon.
    2. Put half in the bottom of the glass, top with half of the berry mixture, the other half of the yogurt, and then the rest of the berries. 
    3. Now top it off with a tablespoon of any granola. Dig in and enjoy!


    This morning for breakfast I had some overnight oats, using Katie's Never-Ending Oatmeal Bowl trick. I topped it off with half a sliced banana and some cinnamon.


    Then I decided to add a PB2 drizzle to the top...


    Now it's time for me to go mop the floors and exercise before I head over to Randy's grandparents for lunch. Yay for cleaning!
